Pretty Things: July 2017

  1.  Bell’Alimento:  Grilled Cesar Salad.  When I was in my early 20s, I went through a phase of grilling romaine lettuce for salads all the time, and then I faded out of it at some point.  It was delicious, though!  You only do it for 1-2 minutes after cutting it in half lengthwise and  spritzing some olive oil, salt, and pepper.  It completely changes things up.  You can do it with kale, too.Grilled-Cesar-Salad-061-533x800.jpg

 

2.  101 Cookbooks:  Thai Zucchini Soup.  It’s hard to find a good meal for a crisp day in the middle of summer.  It gets hot where I live, but there’s still random days where it storms all day and stays in the 70s.  Those kind of days are perfect for a light, summery soup like this one.  You get coziness from the warm bowl of soup, and a summery feel from the corn and zucchini.thai-zucchini-soup-recipe

 

3.  A Thought For Food:  Potato Salad with Dill and Horseradish Aioli.  I love any kind of potato salad except for the traditional kind you get in the grocery store.  I love it as long as it’s homemade and interesting.  Potatoes can handle almost any flavor combo (like most grains and starches), but dill and horseradish go especially well with it.  I love how this salad stays away from a heavy dressing and lets most of the flavor come from the fresh veggies and herbs.  If you like the idea of dill and horseradish, try these carrots.Horseradish-Potato-Salad41-624x1024.jpg

 

4.  The Food Gays:  Beet and Mixed Bean Hummus.  Beets may not be everyone’s cup of tea, but even beet-haters have to admit the color is gorgeous!  If you don’t like beets, you can also use roasted and pureed carrots.  2015-03-07-09.10.16.jpg

 

5.  Cupcakes Garden:  S’more Graham Cracker Cupcakes.  If you or one of your kids has a summer birthday, this would be the best birthday cake, wouldn’t it?  Everyone gets a marshmallowy surprise inside.  And an added bonus is that cupcakes take way less time to cook than a regular sized layer cake, so your oven won’t heat up the kitchen too much.Graham-Cracker-Cupcakes1 (1).jpg

 

6.  A Saucy Kitchen:  Vegetarian Zucchini Lasagna Spirals.  To me, this looks like the perfect healthy summer Sunday dinner.  It uses all the flavors of the season and cooks them in a comforting way.  The colors are so beautiful, you may not even miss the meat.  But you can always add some cooked ground turkey to the sauce while you’re making it.Vegetarian-Zucchini-Lasagna-Spirals_-8.jpg

 

7.  Lovely Little Kitchen:  Mini Mason Jar Lid Strawberry Pies.   Julie always make the cutest desserts.  These look like something out of a storybook.  Not that kids need -encouragement to eat dessert, but the size of these little pies make them even more kid-forward (and portion control!)mini-mason-jar-lid-strawyberry-pies-1-683x1024.jpg

8.  Martha Stewart:  Garden Crudites with Bagna Cauda.  Talk about a fresh and healthy snack!  Bagna Cauda is just a fancy name for a veggie dip made with garlic, olive oil, breadcrumbs, and salt anchovies.  It can also double as a salad dressing.roman-williams-vang-dsc1025-d110525_vert.jpg
